Arrived yesterday - as if it's a rare event for books to walk into my shop. I'm sure many, like me, enjoy a good culinary book ever so often, and this should fit the bill. It's subtitle is 'America's Quest for Culinary Glory at the Legendary Bocuse d'Or Competition. In other words, the real Iron Chef.
If you don't like to eat or cook - never mind.

Have you read the Rex Stout book "Too Many Chefs", I personally think it's one of the better Nero Wolf books and also has some interesting things to say about the American contribution to hauteur cuisine.

ReplyDeleteIn the US it seems cuisine is regional, different parts of the country have different kinds of dishes they are famous for.

ReplyDeleteGreat book, I dont remeber what channel it was but they did a show about the two chefs from the U.S. that competed. They practiced there dishes for a year. The dishes they designed where spectacular. They were coached by Thomas Keller and David Bouland two of Americas best chefs. Then there was a whole team of people helping out. It is with out a doubt the toughest compition out there for a chef. I went and saw it when I was living in Paris and the food was beautiful.
ReplyDeleteThe old skills for making large display platters is not used much anymore and it would be a lost art if not for the Bocuse d'Or Competition. I was schooled in culinary school in Paris France and food has a complete different meaning over there. In school we did not use any prepared items everything was made as if has been from the start. I remember holding chickens over the gas burner to remove pen feathers. No precut chicken there.
