As my long dear departed Grandfather was fond of saying, "Boy, I gots me a hankering for gravy and biscuits." Sausage gravy and biscuits is man food. It soothes the soul.
I know, I can hear you lovely ladies scream, 'but Stephen, your heart.' My heart is fine. Even the cardiologist said I should 'cheat' once in a blue moon. A diet of tree bark and thistles gets old.
My recipe is very close to the one found at Deep South Dish. This link will take you to this sweet woman's sausage gravy recipe. I've been making my sausage gravy from scratch for years. I have a freezer filled with fresh ground sausage and I will not allow it to waste away in a frozen state any longer.
On a rainy night this salty and creamy dish over hot fresh buttermilk biscuits makes my soul sing for joy. Sadly, Sweet Wife refuses to touch it....women. Little Bit, on the other hand, begs me to make a batch on those Sunday mornings when she's with us. I can hear her now, "Please, Papa. I want your good 'ole gravy and biscuits."
The girl has class.
If you need a buttermilk biscuit recipe, please try this one from my good friend, The Mouth of the South. This sweet young lady knows her stuff.
If you must, frozen biscuits will suffice. Just make sure you serve the dish hot.

DeleteIt is fairly easy to make heart healthy biscuits & gravy. It just takes some very lean homemade sage sausage sauteed w/onions in olive oil, biscuits made with olive oil & skim milk instead of shortening or butter, and gravy made with skim milk instead of high fat milk.

DeleteMan food! Not too popular a food up north, but there was a place down the road that did it justice. Too bad they closed. It was a family run business, but when the family started fighting, that was the end of it.

Now Sixbears, you good folks need to get with it. Sausage gravy and biscuits is fine vittles. It's easy to make, give it a try. It only takes a good ground sausage, browned - then about four tablespoons of flour, salt and pepper, red pepper for the men, then milk. I also add a bit of cream, but that's just me. Agree w/Sandy and Tammy. Once or twice a year biscuits and gravy is great. I'm good on the gravy ... if only I could make biscuits. The ones we've tried will easily put an eye out and bruise the side of your face at the same time. I'll check out The Mouth of South's method. We keep on trying (I should have bought stock in White Lilly, until I can grow my own wheat!).

ReplyDeleteDrop biscuits might not be a bad idea for someone that may be having issues, No real working the dough necessary....
2 cups flour
1 T baking powder
1/2 t salt
2 T honey
1/2 cup oil
1 cup milk
Heat oven to 475. Grease cookie sheet. Combine flour, baking powder, salt, honey and oil in large bowl. Add milk. Batter should be a gooey consistency. Spoon on to cookie sheet. Bake 12-15 minutes or until golden brown.
First of my recipes that I found. I like to grind fresh wheat and use half and half flour but it is not necessary. They do not look so pretty but sure do taste great.

DeleteIt's a lucky man who can find a woman who can make a mean skillet of milk gravy and my man is very, very lucky. Had pork chops, mashed potatoes, gravy, and cabbage today. WITH bacon grease in the cabbage. We might die from it, but at least we won't be dying with a piece of lettuce in our stomachs.
ReplyDeleteWhat a nice dinner indeed. Your husband is a very lucky man. I must confess, my gravy isn't for the weak. It bites. I'm a Southern born cook. I was raised with pepper plants as pets. They sprouted from various orifices on my body. I like - spicy. My grandchild, Little Bit, is one of the few girls I know that can handle my cooking without breaking out the fire extinguisher. I like your last line...I too refuse to die with a piece of cow fodder in my belly. Bless you and thanks for the nice comment.

DeleteMy darling wife makes her gravy using a local spiced flour. That along with some of the local whole hog sausage makes for the best sausage gravy I've ever had. And yeah, if you can't let go of the nuts and twigs every so often, life loses all of its flavor.
