It's hard for me to cook the way I like during the week. Work, family business, plan old weariness shuts me down on weeknights. Then Friday arrives and I take a deep breath and plan for a kitchen session. Most, but not always I think seafood. After all, I live in Florida. When one steps outside here, you wade through seafood. But, I want something different this weekend.
This morning I strolled around the internet and found myself once again at my friend, The Kitchen Witch's blog. She has a recipe listed today for Salmon Croquettes or patties, your choice. I still pronounce salmon with a silent 'L,' having lived out west for much of my life. Give the recipe a try....should be awful good.

ReplyDeleteoh yuck. My mom used to make us eat Salmon (silent "L") croquettes all the time. She claims it was rare but it felt like all the time to me. Not enough ketchup in the world to hide that nastiness. But don't mind my opinion - I hate all seafood - particularly the little buggers with shells on that try to kill me when I inhale their particles :)

ReplyDeletemmm....i love anything out of the ocean! i will even eat rocks! we eat a ton of what we call "fishcakes" here and use all kinds of fish to make them - but my personal fave is cod - oh yumm!

ReplyDeleteThat sounds awesome. Reading this post, I swear I could have written it myself when you talk about not being able to cook the way you want. I did make venison stir-fry this week and it turned out mighty good. We're vacationing in your state next year and I have already found out that the out of state saltwater license is just too cheap. I'll be pulling Redfish and Speckled Trout out for the grill (I hope).
ReplyDeleteLooks good, can smell it real good with memories of my childhood. Grew up eating fish early spring all thru rest of the year! Does the recipe call for large chunks of onions? Thats the one thing I would change--to Vidalia onions. Have checked out the Kitchen Witch blog- love it! How many things do you cook and Little Bit trys it for the first time and loves it..Good memories!
ReplyDeleteI love seafood and salmon is a favorite! Living in the PACNW we have plenty of seafood to enjoy. Fish cakes are delicious and versatile. About the onions, I personally feel onions can easily over power delicate seafood (although salmon is a stronger fish), so use sparingly, if at all. We had cod last night and for lunch today, cod cakes!

Yum, yum. :) I usually prefer white meat for fish"cakes". Like shark or.. forgot the name of the other. But hey, fish is nice in any form!
