Sweet Wife suggested we eat light tonight. Since she welds a mean cast iron skillet her wish was my demand. Not that I complained.
Quick trip to market and we had the makings for fish tacos and a very good salad. She allowed me to drive.
The basics of the salad; baby spinach, feta cheese, cherry tomatoes, slivered almonds, and for Sweet Wife, sliced strawberry. I skipped the berries. She used a Raspberry vinaigrette. She's odd that way. I went with Italian. Skip the creamy dressings, it spoils the effect...
For the fish tacos I went with fresh fillets of Talapia lightly seasoned with Cajun spices and a light sprinkle of sea salt. I browned them in olive oil then placed the fillets in a flour tortilla and covered them in salsa. I like my salsa on the hot side...use mild if you're tender and have liberal tendencies.

A Day Off
Yesterday I took the day off from everything...the blog just didn't seem important. I stayed as far away from this laptop as possible. It just didn't seem important.
I relaxed, read some, spent time with Little Bit. She and I played a few games. Since we had a day long storm highlighted with thunder and lightning and hail we stayed hunkered down for most of the day. It was nice.
I even napped. Little Bit gave me permission. Once in a while we all deserve a day off from our blogs, and since mine was so nice I might just try it again today.
This afternoon I plan to make a huge salad of grilled chicken strips, baby spinach, red onions, cutes and tomatoes and whatever else comes to hand. If you're in the neighborhood, come over and we'll have a bite.
